Spinach and avocado salad
…serves 6
Do what the French so and put the salad together at a picnic. Bring the dressing in a jar and give it a good shake before hand.
Ingredients:
1 packet (500g/2lb) baby spinach leaves
freshly grated nutmeg
1 ripe avocado
50g (2oz) walnuts
dressing:
grated rind and juice of ½ a lemon
pepper
½ tsp French mustard
75ml(2½floz) olive oil
Method:
Place the spinach in a salad bowl and grate over the nutmeg. Peel and slice the avocado. Scatter over the leaves with the walnuts.
