Warm Chocolate Cakes With Mango Pureé

Why not serve this at Easter?
Ingredients
4 egg whites
25g (1oz) caster sugar
½ tsp vanilla
1 tsp cream
3 tbs flour
1 tbs cocoa
50g (2oz) sugar
garnish 1x 400g tin mangoes
juice of ½ lemon
whipping cream
icing sugar
Method
Beat the egg whites until firm. When stiff beat in 25g (1oz) of caster sugar, then add cream and vanilla.
Mix the flour, the remaining sugar and cocoa together. Carefully fold into the meringue.
Spoon into individual greased moulds, e.g. muffin tins. If you are using flexible silicone moulds you don't need to grease them. Cook 15- 20 minutes at 180C (350F, gas 4) until firm.
For the sauce purée the tinned mango with enough of the juice to make a purée, Add lemon juice to taste.
Turn out and serve warm with mango sauce and whipped cream.
Garnish with a slice or two of mango and a dusting of icing sugar.
